Wild Garlic

(Allium ursinum)

Wild garlic - or ramsons - are one of the first plants people think of when you say 'foraging'. For good reason, they're delicious and very potent, easily used as a substitute for shop bought garlic. But also elusive - you have to know where to look!

Fun facts

  • The Latin name means 'bear garlic' as bears like to eat the bulbs!

  • Apparently the leaves used to be used in Scotland to repel midges! [1]

Properties

  • They can essentially be used to replace garlic! Flowers and leaves are edible.

  • Wild garlic leaves have 45mg  per 100g of vitamin c. [1] As a comparison, Spinach has 28mg.

Uses 

  • They can essentially be used to replace garlic! Flowers and leaves are edible.

  • Can be chopped into salads (very thinly), or cooked with other vegetables soups or stews. My personal favourite is to fry it up with some mushrooms.

  • Can be used to alleviate coughs and colds.
